Nothing beats the way my nana used to make this!

These Southern Peach Fritters are a delightful treat that perfectly captures the essence of fresh summer peaches. Lightly spiced, tender on the inside, and crispy on the outside, these fried morsels are a wonderfully sweet and comforting dessert or breakfast item, especially when dusted with powdered sugar.

Ingredients:

Diced fresh peaches1 1/2 cups (about 2 medium peaches)
Vegetable oilFor frying
Powdered sugarFor dusting

Instructions:

  1. Combine Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, ground cinnamon, and ground nutmeg.
  2. Combine Wet Ingredients: In another separate bowl, beat the large eggs. Then, mix in the milk and vanilla extract.
  3. Combine Wet and Dry: Gradually add the wet ingredients mixture to the dry ingredients, stirring until just combined. Be careful not to overmix the batter; a few lumps are fine. Overmixing can lead to tough fritters.
  4. Fold in Peaches: Gently fold in the diced fresh peaches, ensuring they are evenly distributed throughout the batter.
  5. Heat Oil: Heat about 1 inch of vegetable oil in a deep skillet or a heavy-bottomed pot over medium heat until it reaches 350°F (175°C). Use a kitchen thermometer to ensure accuracy.
  6. Fry Fritters: Carefully drop spoonfuls of the batter into the hot oil. Take care not to overcrowd the pan, as this can lower the oil temperature and result in greasy fritters. Fry the fritters in batches if needed.
  7. Cook Until Golden: Cook each fritter for about 2-3 minutes per side, or until they are beautifully golden brown and cooked through in the center. Use a slotted spoon or spider to carefully remove the fritters from the hot oil.
  8. Drain & Serve: Place the cooked fritters on a paper towel-lined plate to drain any excess oil. Dust the warm fritters generously with powdered sugar immediately after draining. Serve and enjoy!
