Triple Crust Peach Cobbler
This decadent peach cobbler features layers of flaky pastry enveloping sweet, spiced peaches. With three delicious crusts and a citrus-kissed filling, it’s a nostalgic dessert that’s ideal for gatherings and family meals.

Instructions
1️⃣ Preheat Oven & Bake Crust Strips
Preheat the oven to 350°F (175°C). In a bowl, mix one package of pie crust mix with ⅓ cup of cold water until a dough forms. Shape into a rectangle (about 11×8 inches), then cut into four 11×2 inch strips. Arrange on an ungreased cookie sheet and bake for 17 minutes. Set aside to cool.
2️⃣ Line Baking Dish with Second Crust
Prepare another package of pie crust mix with ⅓ cup cold water. Roll the dough out to fit the bottom and sides of a 13×9×2-inch ungreased baking dish. Press gently into place.
3️⃣ Make the Peach Mixture
In a large bowl, combine sugar, melted butter or ghee, nutmeg, cinnamon, vanilla extract, lemon extract, and the peaches with their syrup. Mix thoroughly.
4️⃣ Assemble – First Peach Layer
Pour half of the peach mixture into the prepared baking dish. Place the pre-baked crust strips evenly across the peach layer.
5️⃣ Assemble – Second Peach Layer
Pour the remaining peach filling over the pastry strips, spreading it out evenly.
6️⃣ Add Final Top Crust
Mix the final pie crust package with the remaining ⅓ cup cold water to form a dough. Roll it out to cover the top of the dish. Cut small slits into the dough to allow steam to escape while baking. Carefully place it over the peach mixture and seal the edges against the pan.
7️⃣ Bake the Cobbler
Bake uncovered for 1 hour, or until the top crust is golden and the filling is bubbling.
8️⃣ Cool & Enjoy
Let the cobbler cool slightly before serving. Cover and refrigerate any leftovers.
