Instructions

Step 1: Prep the Dish
Lightly grease a 9×13-inch baking pan and set aside.

Step 2: Melt First Portion of Sugar
In a heavy-bottomed saucepan, slowly melt 2 cups of sugar over low heat. Stir often to prevent burning, allowing it to liquefy fully over about 20 minutes.

Step 3: Simmer Cream Mixture
Meanwhile, in a larger saucepan or Dutch oven, combine the remaining 4 cups of sugar with the heavy cream. Simmer gently over low heat, stirring occasionally.

Step 4: Combine the Sugars
Once the melted sugar is fully liquefied, carefully pour it into the cream mixture, stirring constantly to blend it thoroughly.

Step 5: Cook to Softball Stage
Turn the heat up to medium and cook the mixture until it reaches 244°F (118°C), or until a small drop in cold water forms a soft, pliable ball.

Step 6: Add Baking Soda
Remove the mixture from the heat and immediately stir in the baking soda until fully dissolved.

Step 7: Blend in Butter and Vanilla
Add the unsalted butter and vanilla extract. Mix well until the butter has melted completely and the mixture becomes smooth and glossy.

Step 8: Let it Rest
Allow the candy mixture to sit undisturbed for 20 minutes. This rest helps improve texture and flavor.

Step 9: Stir in Nuts
After resting, stir in the chopped nuts until the gloss disappears and the mixture thickens slightly.

Step 10: Pour and Cool
Transfer the candy into the prepared baking pan and spread evenly. Let it cool at room temperature for 1–2 hours, or leave it overnight for best results.

Step 11: Cut and Serve
Once firm, slice into small squares and enjoy or package as a delightful homemade treat.
