  • Sugar – ¾ cup

  • Whole milk – ½ cup
  • Vanilla extract – 1 tsp
  • Fresh or frozen blueberries – 3 cups

Streusel Topping

  • Sugar – ½ cup
  • Cake flour – ⅓ cup
  • Cinnamon – ½ tsp
  • Cold butter, cubed – 4 tbsp

  1. Preheat & Prep: Heat your oven to 375°F (190°C). Grease a 9×9-inch (23×23 cm) baking dish.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the cake flour, baking powder, and salt.
  3. Cream Butter & Sugar: In a separate bowl, beat the softened butter and sugar until light and fluffy. Add the egg and vanilla, mixing until smooth.
  4. Combine Batter: Alternately mix in the flour mixture and milk, stirring just until everything is combined.
  5. Add Blueberries: Gently fold in the blueberries, being careful not to mash them.
  6. Pour Batter: Spread the batter evenly in the prepared baking dish.
  7. Make Streusel: In a small bowl, combine sugar, flour, cinnamon, and cold butter. Mix until crumbly, then sprinkle evenly over the batter.
  8. Bake: Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool & Serve: Let the buckle cool for at least 10 minutes before slicing. Serve warm or at room temperature, and for an extra indulgence, top with vanilla ice cream or whipped cream.
