Pecan Pie Cobbler

This decadent Pecan Pie Cobbler is a delicious twist on the classic pecan pie — made with two layers of buttery pie crust sandwiching a gooey, caramel-like pecan filling. Extra pecans and syrupy goodness bake on top, creating the perfect cobbler-style dessert.


Ingredients

Brown sugar2 1/2 cups

Pecan halves1 1/2 cups

Instructions

Step 1: Preheat and Prepare the Dish
Set your oven to 425°F (220°C). Lightly coat a 9×13-inch baking dish with nonstick spray to prevent sticking.

Step 2: Bottom Crust
Unroll one pie crust and shape it into a rectangle. Lay it flat in the greased baking dish — it doesn’t need to cover the sides.

Step 3: Make the Filling
In a large mixing bowl, combine the brown sugar, 1/2 cup melted butter, corn syrup, lightly beaten eggs, and vanilla extract. Whisk until smooth and fully blended.

Step 4: Add Pecans
Stir in the chopped pecans, mixing until evenly distributed.

Step 5: Assemble the First Layer
Pour half of the pecan filling mixture over the pie crust in the dish, spreading it evenly.

Step 6: Add the Second Crust
Roll out the second pie crust and place it gently over the filling to create the next layer.

Step 7: Bake the Top Crust
Brush the top crust with 1 tablespoon of melted butter. Bake for about 15 minutes, or until the crust turns golden brown.

Step 8: Lower the Temperature
Take the dish out of the oven and reduce the temperature to 350°F (175°C).

Step 9: Add Remaining Filling and Pecans
Stir the remaining pecan filling mixture and pour it over the baked crust. Scatter the pecan halves evenly across the top (you can arrange them neatly or sprinkle them randomly).

Step 10: Final Bake
Return the dish to the oven and bake for another 30 minutes, or until the filling is set and bubbling slightly around the edges.

Step 11: Cool Before Serving
Let the Pecan Pie Cobbler cool for at least one hour before serving so the layers can set properly. Serve warm or at room temperature — optionally with a scoop of vanilla ice cream!
