Instructions

1. Prep the Essentials

  • Choose hearty bread like multigrain or whole wheat; thin, soft bread may not hold up well.
  • Shred the cheddar from a block for the best melt and flavor. For more depth, add some smoked cheddar into the mix.
  • Thinly slice the tomato and pat dry with a paper towel to avoid a soggy sandwich.

2. Assemble the Layers

  • Place two slices of bread on a flat surface.
  • Add half the shredded cheese to each slice.
  • Layer tomato slices on top of the cheese.
  • Lightly drizzle Worcestershire sauce over the tomatoes (or spread it on the bread’s interior side if you prefer).
  • Add a sprinkle of black pepper for extra bite.
  • Top with the rest of the cheese, then close with the remaining slices of bread.

3. Grill to Perfection

  • Spread softened butter or mayonnaise on the outer sides of the sandwich.
  • Heat a skillet over medium. Once hot, place the sandwiches in the pan and press gently with a spatula.
  • Cook each side for 3–4 minutes or until the bread is crisp and golden, and the cheese has melted completely. Lower the heat if the bread browns too quickly.

4. Slice and Serve

  • Remove from the pan and let sit for a minute.
  • Slice diagonally or down the middle, and serve warm.
  • This sandwich pairs wonderfully with classic tomato soup for a nostalgic, elevated meal.
