Pumpkin Pecan Cobbler is a cozy fall dessert that perfectly blends the rich flavors of pumpkin, warm cinnamon, and nutmeg with the crunchy texture of pecans. Ingredients:

For the Cobbler:

  • All-purpose flour — 1 cup plus 3 tablespoons
  • Baking powder — 2 teaspoons
  • Salt — 1/2 teaspoon
  • Granulated sugar — 3/4 cup
  • Ground cinnamon — 1 teaspoon
  • Ground nutmeg — 1/2 teaspoon
  • Ground cloves — 1/2 teaspoon
  • Pumpkin puree — 1/2 cup
  • Milk — 1/4 cup
  • Melted butter or vegetable oil — 1/4 cup
  • Vanilla extract — 1 1/2 teaspoons

For the Topping:

  • Granulated sugar — 1/2 cup
  • Brown sugar — 1/2 cup
  • Chopped pecans — 1/4 cup
  • Very hot water — 1 1/2 cups

Directions:

  1. Preheat Oven:
    Set your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. Make the Batter:
    In a large bowl, whisk together flour, baking powder, salt, granulated sugar, cinnamon, nutmeg, and cloves until evenly mixed.
    In another bowl, combine pumpkin puree, milk, melted butter (or oil), and vanilla extract until smooth.
    Slowly add the wet ingredients to the dry mixture, stirring gently just until blended—avoid overmixing.
  3. Spread Batter:
    Pour the batter into the prepared dish, smoothing the surface with a spatula.
  4. Prepare Topping:
    In a small bowl, mix granulated sugar, brown sugar, and chopped pecans together. Sprinkle this evenly over the batter.
  5. Add Hot Water:
    Carefully pour the very hot water over the top of the batter and topping—do not stir.
  6. Bake:
    Place the dish in the oven and bake for 40-45 minutes, until the cobbler is bubbling and golden on top.
  7. Cool and Serve:
    Remove from oven and let it cool for a few minutes before serving warm.
