Oven Baked Herbed Sausage Rolls

Golden, flaky, and bursting with flavor, these oven-baked herbed sausage rolls are the perfect bite-sized treat. Fresh herbs elevate the seasoned sausage filling, while the puff pastry bakes to a crisp perfection. Whether served as an appetizer, snack, or part of a brunch spread, these rolls are always a hit.

🧾 Ingredients

IngredientQuantity
Sausage meat1 pound
Puff pastry (thawed)1 sheet
Egg (beaten)1
Fresh parsley (chopped)1 tablespoon
Fresh thyme (chopped)1 tablespoon
Fresh rosemary (chopped)1 tablespoon
Garlic powder1 teaspoon
Salt and pepperTo taste

👨‍🍳 Instructions

Step 1: Prepare the Filling

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the sausage meat with chopped parsley, thyme, rosemary, garlic powder, salt, and pepper. Mix thoroughly until the herbs are evenly distributed throughout the meat.

Step 2: Roll Out the Pastry

On a lightly floured surface, unfold the puff pastry sheet and roll it out slightly if needed. Slice the sheet lengthwise to create two long strips.

Step 3: Fill and Seal

Divide the sausage mixture in half and form each portion into a log shape. Place a sausage log down the center of each pastry strip.
Brush the edges of the pastry with the beaten egg, then fold the pastry over the sausage filling. Press along the edge to seal the seam and form a tight roll.

Step 4: Slice and Arrange

Cut each long roll into six equal pieces (12 total). Arrange them seam-side down on the prepared baking sheet. Brush the tops with the remaining beaten egg to promote browning.

Step 5: Bake to Perfection

Bake for 25–30 minutes, or until the pastry is beautifully golden and the sausage is fully cooked.
Remove from the oven and let cool slightly before serving.

🥄 Serving Suggestions

Serve warm or at room temperature with a side of mustard, chutney, or dipping sauce of your choice. Great for parties, brunch buffets, or an easy make-ahead snack.
