🥪 The Rachel Sandwich: A Turkey & Slaw Spin on a Deli Favorite
If you’re a fan of the Reuben, meet its lighter, equally delicious cousin—the Rachel. This hot, cheesy sandwich replaces corned beef with sliced turkey and substitutes sauerkraut for creamy coleslaw. It’s the ultimate comfort bite for lunch, brunch, or a laid-back dinner.


📝 Ingredients

Rye bread (or preferred bread)8 slices
Swiss cheese8 slices
Sliced turkey breast1 lb or more
Creamy coleslaw1 cup
Unsalted butter3 Tbsp

For the Homemade Thousand Island Dressing:

Mayonnaise½ cup
Ketchup2 Tbsp
Sweet pickle relish2 Tbsp
Grated onion2 Tbsp
Salt & paprikaTo taste

👨‍🍳 Instructions

1. Prep the Bread & Cheese
Lay out all slices of rye bread. Place one slice of Swiss cheese on each.

2. Make the Dressing
In a small bowl, combine mayo, ketchup, relish, grated onion, and a pinch of salt and paprika. Stir until smooth and well mixed.

3. Build the Sandwiches

  • On four slices, spread a generous layer of the dressing.
  • On the other four slices, layer on the coleslaw.
  • Add the sliced turkey over the dressing side.
  • Close each sandwich with the coleslaw side (cheese facing in).

4. Toast Until Golden

  • Spread butter on the top slice of each sandwich.
  • Place butter-side-down in a preheated skillet over medium heat.
  • Butter the other (now top) side.
  • Grill 3–4 minutes per side, or until golden and melty.

5. Slice & Serve
Cut each sandwich in half diagonally. Serve hot with pickles, chips, or a crisp side salad.
