🔪 Instructions

1️⃣ Prepare the Roast
Trim any excess fat from the pork loin, keeping about ¼ inch to enhance the flavor during roasting.

2️⃣ Season Well
Combine all the dry seasonings in a bowl. Rub the mixture generously over the pork, making sure every side is coated. Cover and refrigerate for 1–2 hours to let the flavors develop.

3️⃣ Sear the Pork
In a large Dutch oven, heat olive oil over medium-high heat until shimmering. Brown the pork on all sides to lock in juices and flavor.

4️⃣ Arrange the Vegetables
Place the seared pork in a roasting pan. Surround it with the prepared carrots, potatoes, and onions.

5️⃣ Roast to Perfection
Bake in a preheated oven at 375°F (190°C) for 60–75 minutes, or until the pork reaches an internal temperature of 145°F (63°C).

6️⃣ Prepare the Glaze
While the pork roasts, melt butter in a small saucepan over medium heat. Add the garlic and cook for about 1 minute. Stir in the juice, honey, soy sauce, ketchup, vinegar, mustard, ginger, and a bit of salt and pepper. Simmer for 2–3 minutes until slightly thickened.

7️⃣ Baste Frequently
Every 15 minutes, brush the roast with the glaze to create a deep, caramelized coating.

8️⃣ Rest and Serve
Once the pork is done, cover it loosely with foil and let it rest for 15 minutes before slicing. Serve with the roasted vegetables and drizzle with any remaining glaze for a comforting, flavorful meal.
