  • ¾ cup packed brown sugar
  • ½ cup (1 stick) butter, softened
  • 2 eggs
  • ⅓ cup sour cream
  • 4 ripe bananas, mashed
  • 1 ½ teaspoons vanilla extract

For the Glaze:

  • ¼ cup packed brown sugar
  • 2 tablespoons butter
  • 2 tablespoons heavy cream
  • ⅓ cup powdered sugar
  • ½ teaspoon kosher salt

Directions:

  1. Prepare Oven and Pan: Heat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.
  3. Cream Butter and Sugar: In a large bowl, beat the brown sugar and softened butter until fluffy. Add eggs one at a time, mixing well after each addition.
  4. Add Wet Ingredients: Stir in the sour cream, mashed bananas, and vanilla until combined. Gradually add the dry ingredients and mix just until incorporated. Avoid overmixing.
  5. Bake: Pour the batter into the prepared pan and bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
  6. Make the Glaze: While the bread cools, combine brown sugar and butter in a small saucepan over medium heat. Stir constantly until it comes to a boil and sugar dissolves, about 1 minute. Remove from heat and stir in heavy cream. Whisk in powdered sugar and kosher salt until smooth. Let cool for 5 minutes.
