Instructions
- Mix the Spices: In a small bowl, combine paprika, garlic powder, onion powder, chili powder, cumin, salt, and pepper to make a seasoning blend.
- Season the Chicken: Pat the chicken halves dry and rub both sides evenly with the spice mixture.
- Sear the Chicken: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear the chicken for 3–5 minutes per side, until golden brown. Set aside (it doesn’t need to be fully cooked yet).

- Melt & Cook Through: Cover the skillet with a lid or foil. Reduce heat to low and cook for 3–5 more minutes, until the cheese melts and the chicken reaches 165°F (74°C).
