Blueberry Jell-O Salad

Bright, fruity, and irresistibly creamy, this Blueberry Jell-O Salad is a nostalgic favorite that brings color and flavor to any table. Perfect for potlucks, family dinners, or festive gatherings, this layered treat combines a tangy Jell-O fruit base with a smooth, sweet cream cheese topping.


Ingredients:

For the Filling:

Blackberry Jell-O (or raspberry/cherry)2 (3 oz.) packages
Crushed pineapple, drained1 (16 oz.) can
Blueberry pie filling1 (21 oz.) can

For the Topping:

Sugar2 tablespoons
Frozen whipped topping, thawed1 (16 oz.) carton

Instructions:

1. Make the Jell-O Base:
In a large mixing bowl, combine the boiling water with the Jell-O packets. Whisk thoroughly for 3–4 minutes until the gelatin is fully dissolved.

2. Add the Fruit:
Stir in the drained pineapple and the blueberry pie filling. Mix well. Pour the mixture into a 9×13-inch dish and refrigerate for 2–3 hours, or until fully set.

3. Prepare the Creamy Topping:
In a separate bowl, beat the softened cream cheese with an electric mixer for 2–3 minutes until smooth and airy. Add the sugar and continue mixing for another 2–4 minutes until well incorporated.

4. Fold in the Whipped Topping:
Gently fold the whipped topping into the cream cheese mixture using a spatula. Stir until completely blended and smooth.

5. Assemble the Layers:
Once the Jell-O base is firm, evenly spread the cream cheese mixture over the top. Smooth out the surface with a spatula.

6. Chill Before Serving:
Place the dish back in the fridge for at least 30 minutes to allow the topping to firm up.

7. Serve & Enjoy:
Cut into squares and serve chilled. It’s a cool, creamy, and fruity delight that’s always a crowd favorite!
