Scotcheroos have earned their status as a go-to treat thanks to how quick they are to whip up—no oven required! These no-bake bars combine the irresistible flavors of sweet, salty, and crunchy with a rich peanut butter base and a smooth chocolate-butterscotch topping.


Ingredients:

Instructions:

  1. Prepare the Pan & Cereal: Lightly grease a 9×13-inch pan and set it aside. Pour the Rice Krispies cereal into a large bowl and set it nearby.
  2. Make the Peanut Butter Mixture: In a medium saucepan over medium heat, combine the sugar, corn syrup, and peanut butter. Stir continuously until the mixture begins to bubble. As soon as it reaches a boil, take it off the heat.
  3. Mix and Press: Quickly pour the hot peanut butter mixture over the cereal. Stir well until the cereal is completely coated. Press the mixture evenly into the prepared baking pan using a spatula lightly coated with cooking spray or butter.
  4. Melt the Topping: Place the chocolate and butterscotch chips in a microwave-safe bowl. Heat in 30-second bursts, stirring each time, until melted and smooth.
  5. Spread and Set: Pour the melted chocolate-butterscotch topping over the cereal layer. Use a spatula to spread it evenly across the top. Let the bars cool completely at room temperature until the topping is firm.
  6. Serve: Once set, slice into bars and enjoy this rich, crunchy treat.
