Ingredients

Gather the following ingredients before you begin:

IngredientAmount
Mozzarella string cheese10 oz (about 10 sticks)
Italian bread crumbs1 cup
Flour1 cup
Eggs2
Milk¼ cup
Cayenne pepper (optional)To taste

Instructions

Once everything is prepped, you’re ready to start frying.

  1. Place the mozzarella sticks on a cutting board and cut them into small, bite-sized pieces.
  2. In a medium bowl, beat the eggs until smooth. Add the milk and whisk until fully combined.
  3. Arrange three separate bowls for breading: one with flour, one with the egg mixture, and one with Italian bread crumbs.
  4. Roll each piece of cheese in the flour, dip it into the egg mixture, then coat it thoroughly with bread crumbs. Set the breaded pieces aside on a plate.
  5. Heat vegetable oil in a medium skillet to approximately 350°F. To check readiness, place the handle of a wooden spoon into the oil—steady bubbling means it’s ready.
  6. Prepare a plate lined with paper towels and set it nearby.
  7. Carefully add 5–7 cheese bites to the hot oil, making sure they don’t touch. Fry for about 30 seconds, or until golden brown.
  8. Use a slotted spoon to remove the fried cheese bites and place them on the paper towels to drain excess oil.
  9. Repeat the process in batches until all the cheese bites are cooked.
  10. Serve immediately with warm pasta sauce for dipping, or enjoy them as-is.
