Slow Cooker Cheesy Tortellini

This Slow Cooker Cheesy Tortellini dish is an ideal option for a quick and comforting weeknight dinner. With very little preparation, you just toss all the ingredients into your slow cooker and return to a rich, cheesy meal. The tortellini cooks perfectly tender in a flavorful tomato sauce, finished with a delicious layer of melted mozzarella and Parmesan cheeses.


Slow Cooker Cheesy Tortellini

Ingredients:

Diced tomatoes1 can (14 oz)
Tomato sauce1 can (8 oz)
Vegetable broth1 cup
Shredded mozzarella1 cup
Grated Parmesan cheese½ cup
Chopped onion½ cup

Dried basil1 teaspoon
Dried oregano1 teaspoon
Salt and pepperTo taste

Instructions:

Step 1: Prepare the Sauce
In the slow cooker, combine diced tomatoes, tomato sauce, vegetable broth, onion, garlic, basil, and oregano. Mix everything together thoroughly.

Step 2: Add the Tortellini
Place the cheese tortellini into the slow cooker and gently stir to coat the pasta evenly with the sauce.

Step 3: Slow Cook
Cover and cook on low for 4 to 6 hours, or on high for 2 to 3 hours, until the tortellini is soft and cooked through.

Step 4: Add Cheese
Sprinkle the shredded mozzarella and grated Parmesan evenly over the cooked tortellini. Cover again and let the cheese melt for about 10 minutes.

Step 5: Final Seasoning and Serve
Adjust seasoning with salt and pepper to your preference. Stir gently to combine the melted cheese into the sauce, then serve hot.
