Instructions

1. Season the Pork Chops

Rub the pork chops generously with paprika, salt, pepper, garlic powder, onion powder, oregano, thyme, and adobo. Let them sit while you prep the other components.

2. Prepare the Baking Dish

Grease a 2-quart baking dish with butter so the ingredients don’t stick.

3. Brown the Pork Chops

Heat 2 tablespoons of butter in a large skillet over medium-high heat. Add the minced garlic, then sear the pork chops on both sides until nicely browned. Transfer them to a plate and set them aside.

4. Make the Mushroom Sauce

Add the remaining 2 tablespoons of butter to the same pan. Cook the sliced onion until softened, then stir in the cream of mushroom soup and milk until smooth. Remove from heat.

5. Assemble and Bake

Spread the thin potato slices in an even layer at the bottom of the prepared dish. Set the browned pork chops on top. Pour the mushroom sauce over everything, making sure the chops and potatoes are well coated.

Cover the dish and bake at 350°F for 30 minutes. Uncover and continue baking for an additional 40 minutes, or until the top is bubbling and lightly browned.

Garnish with parsley if you’d like a pop of color.
