For the Filling

  • Spinach (fresh sautĂ©ed or thawed frozen) – 2 cups, drained and squeezed
  • Mozzarella, shredded – 1 cup
  • Parmesan, grated – ÂŒ cup
  • Cream cheese (optional) – ÂŒ cup, for extra smoothness
  • Garlic, minced – 1 clove
  • Ground black pepper – ÂŒ tsp
  • Red pepper flakes (optional) – a pinch

For the Pastry

  • Puff pastry sheet – 1 (thawed, refrigerated)
  • Egg (for egg wash) – 1, beaten
  • Optional toppings – Sesame seeds, grated cheese, or everything bagel seasoning

1. Preheat the Oven
Set to 400°F (200°C) and prepare a baking tray with parchment paper.

2. Make the Filling
In a mixing bowl, combine spinach, cheeses, garlic, and seasoning. Blend until evenly mixed. Adjust seasoning if needed.

3. Prepare the Pastry
Roll out the puff pastry on a floured surface. Slice into 2–3 inch squares—you’ll get about 12–16 depending on size.
