- Eggs, large, room temperature – 5 – structure, light texture
- Vanilla extract – 1 tsp – flavor enhancer

Instructions
Step 1: Preheat & Prep
- Preheat oven to 350°F (175°C).
- Grease mini cake molds or a mini muffin pan with butter, dust lightly with flour, and tap out excess.
Step 2: Cream Butter & Sugar
- Beat the butter and sugar on medium speed with an electric mixer until pale, fluffy, and light (3–4 minutes).
- Scrape down the sides as needed.
Step 3: Add Eggs & Vanilla
- Reduce mixer to medium-low.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract. (The batter may look slightly curdled—this is normal and will smooth when flour is added.)
Step 4: Incorporate Dry Ingredients
- Sift together flour, baking powder, and salt.
- Gradually add to the wet mixture on low speed until smooth. Avoid overmixing.
Step 5: Fill Molds & Add Jam
- Spoon batter halfway into each mold.
- Place 1 tsp of strawberry jam in the center of each.
- Cover with remaining batter, enclosing the jam, and smooth the tops gently.
Step 6: Bake
