Cheesy Hamburger Potato Casserole

This hearty Cheesy Hamburger Potato Casserole is the definition of comfort food. With layers of savory ground beef, tender potato slices, and melty cheddar cheese all smothered in a rich, creamy sauce, it’s the perfect meal to warm up any family dinner night.

Ingredients:

Instructions:

Step 1: Preheat and Prepare the Pan
Start by preheating your oven to 350°F (175°C). Lightly coat a 9×13-inch baking dish with non-stick spray.

Step 2: Cook the Meat and Onion
In a large skillet, combine the crumbled ground beef and diced onion. Cook over medium heat until the meat is browned and the onion is soft. Drain off any excess grease.

Step 3: Slice the Potatoes
While the meat is cooking, peel and slice the potatoes into ¼-inch rounds. Try to keep them uniform in size for even cooking.

Step 4: Assemble the Casserole
Begin layering in the prepared dish:

  • Lay down a layer of sliced potatoes.
  • Season with salt and pepper.
  • Spread about one-third of the beef and onion mixture evenly over the potatoes.
  • Top with a layer of shredded cheese.

Repeat this layering process twice more—ending with the remaining cheese as the top layer.

Step 5: Mix the Sauce
In a bowl, whisk together the cheddar cheese soup, evaporated milk (or whole milk), and the additional ½ cup of milk. Add more salt and pepper to taste, if desired.

Step 6: Pour and Cover
Pour the sauce mixture evenly over the layered ingredients in the baking dish. Cover tightly with foil and place in the oven. Bake for 1 hour.

Step 7: Uncover and Finish Baking
Remove the foil and continue baking for another 15 minutes, or until the cheese is bubbly and slightly golden on top.

Step 8: Check for Tenderness
Pierce a potato slice with a fork to check for doneness. If your slices were a bit thick, you may need to add additional baking time until they’re fork-tender.
