Comforting Magic Chicken Pie
This Magic Chicken Pie is the ultimate easy comfort food. A creamy, savory mix of chicken, vegetables, and cheese is blanketed by a “magic” batter that transforms into a golden crust on top and a soft, dumpling-like layer underneath. Perfect for busy weeknights or cozy weekends, it’s a full meal in one dish with hardly any cleanup.
Ingredients:
Ingredient | Amount |
---|---|
Cooked or shredded chicken | 2 cups |
Butter, cubed | 6 tablespoons |
Onion, chopped | ½ medium |
Bisquick baking mix | 2 cups |
Chicken broth | 1½ cups |
Milk | 1½ cups |
Cheddar cheese, grated | 1 cup |
Cream of chicken soup | 10.5 oz (1 can) |
Mixed vegetables (frozen or fresh) | 2 cups |
1. Preheat & Melt Butter
Preheat your oven to 350°F (175°C). Add the cubed butter to a 9×13-inch baking dish and place it in the oven until the butter melts. Remove once melted.
2. Mix the Batters
In one bowl, combine milk and Bisquick and whisk until smooth.
In another bowl, whisk together chicken broth and cream of chicken soup. Set both aside.
3. Layer Ingredients (Do Not Stir!)
Over the melted butter, layer the following ingredients in order:

Gently pour the Bisquick mixture over the top. Do not mix.
Next, slowly pour the soup and broth mixture over everything. Again, do not stir.
5. Bake
Place in the oven and bake for 45 minutes, or until the top is golden and set. A toothpick inserted should come out clean.
6. Let Rest & Serve
Allow the pie to rest for a few minutes so it can finish setting up. Serve warm and enjoy a slice of magic!
