Ingredients
Ingredient | Quantity |
---|---|
Butter | 2 tablespoons |
Yellow onion, finely diced | 1 small |
Garlic cloves, minced | 2 |
Corn kernels (fresh or frozen) | 4 cups |
Jalapeños, finely chopped | 2 (seeded if desired) |
Heavy cream | 1 cup |
Cream cheese, room temperature | 4 oz |
Freshly grated Parmesan | 1/2 cup |
Granulated sugar | 1 tablespoon |
Salt | 1 teaspoon, or to taste |
Black pepper, freshly ground | 1/2 teaspoon |
Instructions
1️⃣ Cook the Aromatics
Melt the butter in a large skillet over medium heat. Add the chopped onion and sauté for about 5 minutes, or until it’s soft and translucent. Add the garlic and cook for another minute, stirring constantly.
2️⃣ Add Corn and Heat
Stir in the corn and cook for around 3 minutes. Add the minced jalapeños and let everything simmer together for an additional 5 minutes, allowing the spice and sweetness to blend.
3️⃣ Make It Creamy
Pour in the heavy cream and add the softened cream cheese. Stir constantly until the cream cheese melts fully and the mixture begins to thicken—this should take 3–5 minutes.
4️⃣ Mix in Cheese & Seasonings
Turn off the heat. Stir in the Parmesan, sugar, salt, and black pepper. Taste and adjust seasoning as needed.
5️⃣ Serve Warm
Dish up while still warm and creamy. This side is sure to steal the show!
