These Lemon Blondies are a delightful twist on the classic, offering a burst of bright, tangy lemon flavor in a wonderfully chewy bar. With a tender crumb and a sweet-tart lemon icing, they’re a perfect treat for spring, summer, or whenever you crave a little sunshine.

Ingredients:

For the Blondies:

Instructions:

  1. Preheat Oven & Prep Dish: Preheat your oven to 350°F (175°C) and grease an 8×8 baking dish.
  2. Combine Wet Ingredients (Blondies): In a large bowl, add the melted butter, granulated sugar, and 1/4 cup powdered sugar. Beat with an electric mixer or whisk until smooth and well combined.
  3. Add Eggs & Flavorings: Mix in the eggs one at a time, ensuring each is fully incorporated before adding the next. Then, stir in the lemon zest, fresh lemon juice, vanilla extract, and the optional lemon extract, mixing until well combined.
  4. Combine Dry Ingredients: In a separate small bowl, sift together the flour, baking powder, and salt.
  5. Mix Wet & Dry: Slowly add the dry ingredients into the wet ingredients, mixing until just combined. Be careful not to overmix the batter.
  6. Bake Blondies: Transfer the batter to the prepared baking dish and spread it evenly. Bake for 16-18 minutes, or until the edges are lightly golden and a toothpick inserted into the center comes out with moist crumbs attached (you don’t want it completely clean for chewy blondies).
  7. Cool Blondies & Prepare Icing: Allow the blondies to cool completely in the pan on a wire rack while you prepare the icing. For the icing, in a small bowl, stir together the 3/4 cup powdered sugar and 1 ½ – 2 tablespoons fresh lemon juice until smooth and pourable.
  8. Ice & Set: Once the blondies are completely cool, pour the icing evenly over them and let it set for 10-15 minutes before slicing and serving.
