- Preheat & Prep Pan:
Heat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan. - Mix Dry Ingredients:
In a large bowl, whisk together the flour, sugar, baking soda, and salt. - Incorporate Butter & Eggs:
Add the softened butter and blend with a mixer or pastry cutter until the texture is crumbly. In another bowl, whisk the eggs and vanilla, then stir into the flour mixture until just combined. - Add Pineapple & Buttermilk:
Gently fold in the crushed pineapple and buttermilk, stirring until smooth and fully mixed. - Bake:
Pour the batter into the prepared pan and spread evenly. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean. - Cool:
Allow the cake to cool in the pan for 10–15 minutes before turning it out onto a wire rack. Let it cool completely before frosting. - Make the Frosting:
In a bowl, beat the softened butter until creamy. Gradually add the powdered sugar, mixing until smooth. Add in the pineapple and vanilla extract, beating until the frosting is fluffy and spreadable. - Frost & Garnish:
Once the cake is fully cooled, spread the frosting over the top and sides. For a tropical finishing touch, sprinkle with shredded coconut if desired.
