Bright & Moist Pineapple Cake

🍍 Pineapple Cake

Ingredients

For the Cake:

For the Frosting:

Powdered sugar4 cups
Crushed pineapple, drained1/4 cup
Vanilla extract1 teaspoon
Shredded coconut (optional)1/4 cup

🧁 Instructions

  1. Preheat & Prep Pan:
    Heat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. Mix Dry Ingredients:
    In a large bowl, whisk together the flour, sugar, baking soda, and salt.
  3. Incorporate Butter & Eggs:
    Add the softened butter and blend with a mixer or pastry cutter until the texture is crumbly. In another bowl, whisk the eggs and vanilla, then stir into the flour mixture until just combined.
  4. Add Pineapple & Buttermilk:
    Gently fold in the crushed pineapple and buttermilk, stirring until smooth and fully mixed.
  5. Bake:
    Pour the batter into the prepared pan and spread evenly. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool:
    Allow the cake to cool in the pan for 10–15 minutes before turning it out onto a wire rack. Let it cool completely before frosting.
  7. Make the Frosting:
    In a bowl, beat the softened butter until creamy. Gradually add the powdered sugar, mixing until smooth. Add in the pineapple and vanilla extract, beating until the frosting is fluffy and spreadable.
  8. Frost & Garnish:
    Once the cake is fully cooled, spread the frosting over the top and sides. For a tropical finishing touch, sprinkle with shredded coconut if desired.
