This is an old old recipe, My grandmother used to make this back in the late 40’s early 50’s

This Country Pie is a hearty and comforting dish, combining ground beef, rice, and a flavorful tomato sauce, all topped with melted cheese. It’s a simple, family-friendly meal perfect for a weeknight dinner.

Ingredients:

Herb tomato sauce1 (24 oz) jar, divided
Bread crumbs1/2 cup
Onion, diced1/2
Green bell pepper, chopped1/2
Oregano1/2 teaspoon
Minute Rice1 1/3 cups
Cheddar cheese, shredded1 cup, divided
Water1 cup
Salt1/2 teaspoon
Salsa1/2 cup
Sour cream1/2 cup

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Brown the ground beef over medium heat for 8-10 minutes, or until cooked through. Drain any excess grease and season with salt and pepper to taste. Set aside.
  3. In a large bowl, combine 1/2 cup of the herb tomato sauce with the cooked ground beef, bread crumbs, diced onion, salt, pepper, chopped green bell pepper, and oregano.
  4. Spread this ground beef mixture evenly on the bottom of a deep pie pan or a 9″x9″ baking dish, pressing it halfway up the sides to form a “crust.”
  5. In another bowl, combine the remaining herb tomato sauce with the Minute Rice, water, and 1/2 cup of the shredded cheddar cheese.
  6. Pour the rice mixture over the ground beef “crust” and level it with the back of a spoon.
  7. Pour the remaining tomato sauce over the rice.
  8. Bake for 25-35 minutes, or until the rice is cooked.
  9. Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  10. Serve warm, topped with a spoonful of salsa and a dollop of sour cream.
