This vibrant and flavorful Dublin Pea Salad is a refreshing side dish packed with sweet peas, crunchy peppers, hard-boiled eggs, and sharp Irish cheese, all tossed in a creamy and tangy dressing with a hint of spice and herbs.

Ingredients:

Salad:

Sweet onion½, finely chopped
Frozen peas2 (12 oz) bags, thawed
Hard boiled eggs3, diced
Sweet peppers5, diced
Aged Irish cheese1 ½ cups, shredded or diced

Dressing:

Mayonnaise½ cup
Sweet relish¼ cup
Salt1 teaspoon
Spicy mustard2 teaspoons
Dried thyme1 teaspoon

Instructions:

  1. In a small bowl, place the finely chopped sweet onion and cover it with about ½ cup of cold water. Let the onions soak while you prepare the other salad ingredients. This helps to mellow their flavor.
  2. In a large bowl, combine the thawed peas, diced hard-boiled eggs, diced sweet peppers, and shredded or diced Irish cheese.
  3. Drain the soaked onions well and add them to the large bowl with the other salad ingredients. Gently toss everything together to combine.
  4. Prepare the Dressing: In a separate small bowl, whisk together the mayonnaise, sweet relish, salt, spicy mustard, and dried thyme until the dressing is smooth and well combined.
  5. Pour the prepared dressing over the salad mixture in the large bowl.
  6. Gently toss the salad until all the ingredients are evenly coated with the dressing.
  7. Cover the bowl and refrigerate the Dublin Pea Salad for at least 30 minutes before serving to allow the flavors to meld together.
  8. Serve chilled as a side dish.
