Instructions
Make the Cake:
Preheat & Prepare Pan: Set your oven to 350°F (175°C). Lightly grease a 9-inch round cake pan with baking spray and line the bottom with parchment paper.
Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
Mix Wet Ingredients: In a large bowl, combine sugar, Greek yogurt, oil, eggs, and vanilla. Whisk until everything is smooth and well blended.
Combine Mixtures: Slowly stir the dry ingredients into the wet mixture, whisking gently until no streaks of flour remain. Avoid overmixing to keep the cake tender.
Bake: Pour the batter into the prepared pan and smooth the top. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
Cool: Let the cake rest in the pan for 10 minutes, then turn it out onto a wire rack to cool completely. If needed, level the top with a serrated knife once fully cooled.
Make the Frosting:
Beat Cream Cheese: Using an electric mixer, beat the softened cream cheese until smooth and creamy (2–3 minutes).
Add Remaining Ingredients: Add Greek yogurt, powdered sugar (starting with 1 cup), and vanilla extract. Continue mixing until the frosting is fluffy and well combined. Adjust sweetness by adding more sugar if needed.
Frost the Cake: Once the cake is completely cool, spread the frosting evenly across the top. Garnish with fresh strawberries or berries of your choice, if desired.
