Line an 8-inch square baking pan with foil, leaving the edges hanging over the sides to make removal easier. Lightly grease the foil to prevent sticking after the fudge sets.
In a medium heavy-duty saucepan, combine the granulated sugar, evaporated milk, butter, and salt. Heat over medium, stirring constantly until the mixture reaches a full rolling boil.
Keep stirring and maintain the boil for 4 to 5 minutes. This step ensures a silky smooth fudge by preventing graininess.
Take the saucepan off the heat. Stir in the mini marshmallows, semi-sweet chocolate morsels, vanilla extract, and nuts if desired. Stir briskly for about a minute until everything is melted and blended into a creamy mixture.
Immediately pour the fudge into the prepared pan, spreading it evenly. Refrigerate for at least 2 hours or until firm to the touch.
Use the foil edges to lift the fudge out of the pan. Peel back the foil and cut into 48 small squares. Store the fudge in an airtight container in the refrigerator to keep it fresh.
