This hearty comfort classic brings together seasoned ground beef, filling beans, sweet corn, and a creamy, savory sauce, all finished with a layer of crisp, golden tater tots. Instructions

Step 1: Preheat and Prepare

Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with butter or cooking spray to prevent sticking.

Step 2: Brown the Beef

Heat a large skillet over medium-high heat. Cook the ground beef for 5–7 minutes, breaking it up as it cooks, until fully browned. Drain off any excess grease.

Add the minced garlic and chopped onion to the skillet. Cook for another 3–4 minutes, stirring occasionally, until the onion softens and becomes fragrant.

Step 3: Combine the Filling

In a large mixing bowl, stir together the cooked beef mixture, corn, black beans, cream of mushroom soup, shredded cheese, milk, and sour cream. Mix until everything is evenly combined to create the creamy casserole base.

Step 4: Assemble the Casserole

Spread the mixture evenly into the prepared baking dish, making sure it reaches all corners for even cooking.

Step 5: Add the Tater Tots

Arrange the frozen tater tots in a single, even layer over the top of the casserole. This will create a crisp, golden topping as it bakes.

Step 6: Bake

Place the dish in the oven and bake for 45–50 minutes, or until the tater tots are golden brown and the casserole is bubbling around the edges.

Step 7: Rest and Serve

Allow the casserole to rest for a few minutes before serving so it can set slightly and slice cleanly.
Optional: Garnish with chopped parsley or green onions for added color and freshness.
