This simple recipe transforms the juicy sweetness of ripe watermelon into a concentrated syrup with a beautiful amber color and a honey-like consistency. With just one ingredient, you can create a versatile sweetener perfect for drizzling over desserts, mixing into drinks, or adding a touch of summer flavor to your favorite treats.

Ingredients:

Instructions:

  1. Prepare the watermelon: Begin by cutting the ripe watermelon into chunks and carefully removing all the seeds.
  2. Blend the watermelon: Place the watermelon chunks into a blender and blend until completely smooth, creating a vibrant watermelon juice.
  3. Strain the juice: Pour the blended watermelon through a fine mesh sieve or several layers of cheesecloth placed over a bowl. Gently press down on the solids with a spoon to extract as much juice as possible. You should end up with approximately 4 cups of fresh, strained watermelon juice.
  4. Simmer the juice: Pour the strained watermelon juice into a large, non-reactive pot (such as stainless steel). Place the pot over medium heat and bring the juice to a gentle simmer.
  5. Reduce the juice: Once simmering, reduce the heat to low and let the juice continue to simmer gently, uncovered. Stir the juice occasionally to prevent sticking and to monitor its progress. Allow the juice to reduce slowly for 2 to 3 hours, or until it thickens significantly and transforms into a rich, amber-colored syrup. The exact time will depend on the heat and the water content of your watermelon.
  6. Cool completely: Once the watermelon syrup has reached a thick, honey-like consistency and a deep amber hue, remove the pot from the heat. Allow the syrup to cool completely to room temperature. It will thicken further as it cools.
  7. Store: Once the syrup is completely cool, pour it into a clean jar or bottle with a tight-fitting lid. Store the Watermelon Syrup or Watermelon Honey in the refrigerator. It will keep well for several weeks when properly stored.
