Ingredients:

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Prepare Filling: In a large bowl, combine the finely chopped cooked shrimp, finely chopped chives, minced garlic, soy sauce, sesame oil, and black pepper. Mix well to ensure the flavors are evenly distributed throughout the shrimp mixture.
  3. Soften Rice Paper: Fill a shallow dish (larger than your rice paper wrappers) with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds, or until it becomes soft and pliable. Do not over-soak, as it can become too sticky.
  4. Fill & Roll: Carefully lay the softened rice paper wrapper flat on a clean surface (a damp cutting board can help prevent sticking). Place a spoonful of the shrimp mixture onto the center of the softened rice paper. Fold the sides of the wrapper over the filling, then starting from the bottom edge closest to you, roll tightly upwards to form a neat, compact roll.
  5. Arrange & Brush: Place the finished rolls seam-side down on a baking sheet lined with parchment paper. Leave a little space between each roll. Lightly brush each roll with olive oil or spray with cooking spray. This helps achieve that crispy, golden finish.
