Granny Cake
This comforting, nostalgic dessert is simple to prepare and brimming with old-fashioned flavor. A moist pineapple-filled cake forms the base, topped with a layer of brown sugar and pecans that caramelizes as it bakes. A warm, buttery icing is poured over the cake straight from the oven, making every bite tender and sweet.


Ingredients:

Cake:

Crushed pineapple (with juice)1 (20 oz.) can
Brown sugar1 cup

Icing:

Evaporated milk1 cup
Granulated sugar½ cup
Unsalted butter½ cup (1 stick)
Vanilla extract1 teaspoon

Instructions:

1. Preheat & Prepare Pan:
Set your oven to 350°F (175°C) and grease a 9×13-inch baking pan with butter or non-stick spray.

2. Mix the Cake Batter:
In a large mixing bowl, stir together the flour, sugar, baking soda, and salt. Add the eggs and the undrained crushed pineapple. Stir just until everything is incorporated—don’t overmix.

3. Assemble the Cake:
Pour the batter into your greased baking dish. Sprinkle the chopped pecans evenly over the surface, followed by the brown sugar.

4. Bake:
Place the pan in the oven and bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.

5. Make the Icing:
While the cake is baking, combine the evaporated milk, ½ cup sugar, and butter in a saucepan over medium-high heat. Bring it to a boil, stirring occasionally. Once boiling, remove from heat and stir in the vanilla.

6. Finish & Cool:
As soon as the cake comes out of the oven, pour the hot icing evenly over the top. Let the cake cool completely in the pan so the icing soaks in and sets.

7. Serve:
Slice and enjoy this ultra-moist, sweet, and nutty Granny Cake—perfect for potlucks, gatherings, or a cozy dessert at home.
