📝 Ingredients

For one 9×5-inch loaf

IngredientAmount
All-purpose flour1½ cups
Baking soda1 teaspoon
Baking powder½ teaspoon
Salt½ teaspoon
Ground cinnamon1 teaspoon
Ground nutmeg (optional)¼ teaspoon
Large eggs2
Vegetable oil or melted coconut oil½ cup
Granulated sugar¾ cup
Brown sugar (optional)¼ cup
Vanilla extract1 teaspoon
Grated zucchini (unpeeled)1½ cups (about 1 medium)
Optional add-ins: chocolate chips, chopped walnuts or pecans½ cup

👩‍🍳 How to Make It

1. Preheat the Oven
Set your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.

2. Mix Dry Ingredients
In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg (if using). Set aside.

3. Combine Wet Ingredients
In a large mixing bowl, beat the eggs lightly. Add the oil, sugars, and vanilla extract. Whisk until smooth and well-blended.

4. Combine Mixtures
Gradually add the dry mixture into the wet ingredients. Stir just until everything is combined—don’t overmix.

5. Add Zucchini & Mix-Ins
Fold in the grated zucchini and any optional ingredients like chocolate chips or nuts.

6. Bake the Loaf
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 50–60 minutes, or until a toothpick inserted into the center comes out mostly clean (a few moist crumbs are fine).
👉 Tip: If the top is browning too fast, loosely cover with foil for the final 10–15 minutes.

7. Cool & Serve
Let the loaf cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
Slice and enjoy on its own or with a smear of butter, cream cheese, or alongside a hot drink.

💡 Helpful Tips

  • Use Fresh Zucchini: No need to peel or wring it out—its natural moisture is key to a moist loaf.
  • Switch Up the Sweeteners: You can swap brown sugar for honey or maple syrup for a different flavor profile.
  • Mix-In Ideas: Try raisins, shredded coconut, or even white chocolate chips for a fun twist.
  • Storage: Store in an airtight container at room temperature for up to 3 days, in the fridge for up to a week, or freeze individual slices for longer shelf life.
