Step 1: Prepare and Sauté
Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with olive oil. In a skillet over medium heat, warm the olive oil, then add the chopped onion and minced garlic. Sauté for about 5 minutes, until the onion is soft and translucent.
Step 2: Cook the Spinach
Stir the chopped spinach into the pan and cook for 2–3 minutes, until wilted. Remove from heat and let cool slightly.
Step 3: Mix the Egg Base
In a large bowl, whisk together the eggs, milk, salt, pepper, and nutmeg until smooth. Add the sautéed spinach mixture, feta, and half the mozzarella. Stir gently to combine.
Step 4: Assemble and Bake
Pour the egg mixture into the prepared baking dish and spread it evenly. Sprinkle the remaining mozzarella cheese over the top. Bake for 35–40 minutes, or until the center is set and the top is golden and slightly puffed.
Step 5: Cool and Serve
