Coconut Chewies – A Sweet Treat

1. Preheat the Oven:
Set your oven to 350°F (175°C). Lightly grease or line a 9×13-inch baking pan with parchment paper.

2. Mix Wet Ingredients:
In a large mixing bowl, whisk together the melted butter, brown sugar, eggs, and vanilla extract until smooth and well blended.

3. Combine Dry Ingredients:
In a separate bowl, mix the flour, baking powder, and salt.

4. Combine All Ingredients:
Gradually stir the dry mixture into the wet ingredients until just combined—do not overmix.

5. Fold in Coconut:
Gently fold in the shredded coconut until evenly distributed.

6. Bake:
Spread the batter evenly in the prepared baking dish. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.

7. Cool & Serve:
Allow to cool completely in the pan before cutting into bars. Serve and enjoy!
