  • Smoked sausage – 1 lb (450 g), sliced into ½-inch rounds
  • Baby potatoes – 1 lb (450 g), halved or quartered
  • Onion – 1 small, chopped
  • Bell pepper – 1, any color, chopped
  • Garlic – 2 cloves, minced
  • Olive oil – 2 tbsp, divided
  • Smoked paprika – ½ tsp
  • Dried thyme – ½ tsp
  • Salt & pepper – to taste
  • Fresh parsley – 2 tbsp, chopped (for garnish)

Prepare the Potatoes
Rinse and cut the potatoes in halves (or quarters if large).
Optional: Parboil for about 5 minutes to speed up cooking.

Brown the Sausage
Heat 1 tablespoon of olive oil in a large skillet over medium heat.
Cook the sausage slices for 4–5 minutes until browned, then remove and set aside.

Cook the Vegetables
