These delicate shortbread-style cookies are rich, buttery, and packed with finely chopped pecans. Rolled in powdered sugar—twice for that perfect snowy finish—they’re a festive favorite that practically melt in your mouth.

In a large bowl, beat together the softened butter, ½ cup of the powdered sugar, vanilla, salt, and flour until a soft, smooth dough forms.

Step 3: Mix in the Pecans
Fold the chopped pecans into the dough until evenly distributed.

Step 4: Shape and Bake
With slightly damp hands, roll the dough into 1-inch balls (you should get about 36). Arrange on your baking sheet, spacing slightly apart. Bake for 12 minutes, or until the bottoms are just lightly golden.

Step 5: Cool and Coat
Let cookies cool completely on the baking sheet. Place the remaining 1 cup of powdered sugar in a shallow bowl. Roll each cooled cookie in the sugar until fully coated.

Step 6: Optional Second Coat
For an extra snowy look, roll the cookies a second time in powdered sugar after the first layer has set.
