“Old-Fashioned Seven-Minute Frosting”

Classic Seven-Minute Frosting
This timeless frosting is a light, fluffy, and shiny meringue-style icing that pairs beautifully with cakes and cupcakes. Its delicate texture is achieved by gently heating the egg whites while whipping them for extra volume and stability.
Ingredients:
| Ingredient | Amount |
|---|---|
| Sugar | 1 1/2 cups |
| Cold water | 1/3 cup |
| Large egg whites | 2 |
| Cream of tartar | 1/2 teaspoon |
| Salt | Pinch |
| Vanilla extract | 1 teaspoon |
Instructions:
Step 1: In a medium heatproof glass bowl, mix together the sugar, cold water, egg whites, cream of tartar, and salt.
Step 2: Bring a saucepan of water to a gentle simmer. Beat the mixture on low speed for about 30 seconds.
Step 3: Place the bowl over the simmering water, ensuring the bottom doesn’t touch the water. Whip on high speed for around 7 minutes, until the frosting is thick, shiny, and holds firm peaks.
Step 4: Remove from the heat, add the vanilla, and continue beating for 1–2 more minutes until smooth and spreadable.
Step 5: Use the frosting right away, as it begins to set quickly once cooled.
