This wholesome Amish Breakfast Casserole is the perfect comfort dish—golden, cheesy, and packed with flavor. Baked to perfection, it layers seasoned ground beef, crispy hashbrowns, and creamy cottage cheese, all tied together with fluffy eggs and topped with melted cheddar for a rich, hearty start to the day.

Amish Breakfast Casserole

Ingredients:

  • 1 pound ground beef
  • 1 medium onion, diced
  • 3 cups shredded hashbrowns
  • 1 1/2 cups cottage cheese
  • 2 cups shredded cheddar cheese, divided
  • 6 large eggs
  • 1/2 cup milk
  • Salt and black pepper, to taste

Instructions:

Step 1: Brown the Meat
Preheat your oven to 350°F (175°C). In a skillet over medium heat, cook the ground beef and onion until the beef is browned and the onion turns translucent. Drain any excess grease.

Step 2: Mix the Filling
In a large bowl, combine the cooked beef mixture with the hashbrowns, cottage cheese, and 1 1/2 cups of cheddar cheese (set aside the remaining 1/2 cup for later).

Step 3: Make the Egg Blend
In a separate bowl, whisk together the eggs, milk, salt, and pepper until fully combined and slightly frothy.

Step 4: Combine and Assemble
Pour the egg mixture into the beef and hashbrown mixture. Stir gently until everything is evenly coated. Transfer the mixture into a greased 9×13-inch baking dish and spread it out evenly.

Step 5: Bake to Perfection
Sprinkle the remaining cheddar cheese on top. Bake for 35–40 minutes, or until the center is set and the top turns beautifully golden.

Step 6: Cool and Serve
