Mom’s Butter Baked Chicken
This comforting classic, Mom’s Butter Baked Chicken, features tender, juicy chicken breasts coated in a lightly seasoned flour mix, baked in a velvety, buttery sauce made with evaporated milk and cream of chicken soup. It’s simple, satisfying, and pure comfort on a plate.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 can (12 oz) evaporated milk
- 1 cup all-purpose flour
- 1 ½ tsp salt
- 1/8 tsp black pepper
- ¼ cup butter
- 1 can cream of chicken soup
- ¼ cup water
Instructions:
Step 1: Preheat and Prepare
Set your oven to 350°F (175°C). Pour a small amount of evaporated milk into a shallow dish for dipping. In another bowl, combine the flour, salt, and pepper.
Step 2: Coat the Chicken
Dip each chicken breast first in the evaporated milk, then dredge it in the seasoned flour mixture, coating all sides evenly.
Step 3: Start Baking
Place the butter in a 13×9-inch baking dish and melt it in the oven. Once melted, arrange the coated chicken in the dish and bake uncovered for 30 minutes.
Step 4: Prepare the Sauce
In a separate bowl, mix together the remaining evaporated milk, cream of chicken soup, and water until smooth and creamy.
Step 5: Bake Until Done
After the first 30 minutes, carefully flip the chicken breasts over and pour the prepared sauce evenly over the top. Return the dish to the oven and bake for another 30 minutes, or until the chicken is fully cooked (165°F / 74°C) and the sauce is bubbling and golden.
