🥔 Country Ranch Green Beans and Potatoes with Bacon
Ingredients
| Ingredient | Amount |
|---|---|
| Fresh green beans, trimmed | 1 pound |
| Baby potatoes, halved or quartered | 1 ½ pounds |
| Bacon, cooked until crisp and crumbled | 6 slices |
| Ranch seasoning mix | 1 packet |
| Butter, melted | 3 tablespoons |
| Garlic, minced | 2 cloves |
| Salt and black pepper | To taste |
| Fresh parsley, chopped | For garnish |
Instructions
Step 1: Cook the Potatoes
In a large pot of salted water, boil the potatoes for 10–12 minutes, or until fork-tender. Drain and set aside.
Step 2: Cook the Green Beans
In the same pot or a separate one, boil the green beans for 5–7 minutes, just until tender-crisp. Drain and set aside.
Step 3: Prepare the Bacon
Cook the bacon in a large skillet until golden and crisp. Remove and crumble. Keep about 1 tablespoon of the rendered fat in the pan for flavor.
Step 4: Make the Ranch Butter
In a small bowl, whisk together the melted butter, ranch seasoning mix, and minced garlic until well combined.
Step 5: Combine Everything
Heat the skillet with the reserved bacon drippings over medium heat. Add the cooked potatoes, green beans, and bacon. Pour the ranch butter over top and toss everything together until evenly coated and heated through.
Step 6: Serve and Enjoy
Season with salt and pepper to taste. Sprinkle with chopped parsley before serving. Serve warm as a hearty side dish for any meal.
✨ Tip: For extra flavor, try roasting the potatoes before mixing them in, or add a sprinkle of shredded cheddar right before serving.
