Philly Cheesesteak Quesadillas 🧀🥩🌮

Instructions

1. Cook the beef
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced beef, season with salt and pepper, and cook until tender and any liquid has cooked off. Transfer to a plate and keep warm.

2. Cook the vegetables
In the same skillet, add the remaining olive oil. Sauté the onion, bell peppers, mushrooms, and garlic until softened. Return the beef to the pan, stir to combine, and adjust seasoning if needed.

3. Build the quesadillas
Spread a thin layer of mayo on the tortillas if desired. Evenly divide the beef and vegetable mixture among them. Top with Provolone slices and sprinkle with the Mexican cheese blend. Fold each tortilla in half.

4. Cook until crisp
Heat a clean skillet over low heat with a light drizzle of oil. Cook each quesadilla until the outside is crisp and the cheese is melted, flipping once for even browning.

5. Serve and enjoy
Slice into wedges and serve warm with your favorite dipping sauce.

Tip: For extra spice, add sliced jalapeños, or swap tortillas for flatbread if you prefer a crunchier bite.
