Mini Cuppa Cake

This charming, old-fashioned dessert gets its name from the simple measurements of its main ingredients—a cup of flour and a cup of sugar—creating a moist, self-saucing cake filled with sweet fruit cocktail.

Ingredients:
- 1/4 cup unsalted butter, divided
- 1 cup self-rising flour
- 1 cup granulated sugar
- 1 can (15 oz) fruit cocktail in juice, undrained
- Vanilla ice cream or whipped cream, for serving
Instructions:
Step 1: Preheat & Prepare Pan
Set your oven to 350°F (175°C). Grease a 9-inch pie or cake pan with part of the butter.
Step 2: Combine Ingredients
In a large mixing bowl, stir together the flour, sugar, and the fruit cocktail with its juice until just combined.
Step 3: Add Butter & Bake
Pour the mixture into the prepared pan. Cut the remaining butter into small pieces and scatter evenly on top. Bake for 35–40 minutes, or until the surface turns a golden brown.
Step 4: Cool & Serve
Allow the cake to rest for at least 10 minutes before serving. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
