Ingredients

Dry Ingredients

Wet Ingredients

  • Unsalted butter, room temperature – 250 g (1 cup + 3 tbsp / 8.8 oz) – adds richness, tender crumb
  • White granulated sugar – 250 g (1 cup + 3 tbsp / 8.8 oz) – sweetness, moisture
  • Eggs, large, room temperature – 5 – structure, light texture
  • Vanilla extract – 1 tsp – flavor enhancer

Filling

  • Strawberry jam – as needed – gooey center

Instructions

Step 1: Preheat & Prep

  • Preheat oven to 350°F (175°C).
  • Grease mini cake molds or a mini muffin pan with butter, dust lightly with flour, and tap out excess.

Step 2: Cream Butter & Sugar

  • Beat the butter and sugar on medium speed with an electric mixer until pale, fluffy, and light (3–4 minutes).
  • Scrape down the sides as needed.

Step 3: Add Eggs & Vanilla

  • Reduce mixer to medium-low.
  • Add eggs one at a time, mixing well after each addition.
  • Stir in vanilla extract. (The batter may look slightly curdled—this is normal and will smooth when flour is added.)

Step 4: Incorporate Dry Ingredients

  • Sift together flour, baking powder, and salt.
  • Gradually add to the wet mixture on low speed until smooth. Avoid overmixing.

Step 5: Fill Molds & Add Jam

  • Spoon batter halfway into each mold.
  • Place 1 tsp of strawberry jam in the center of each.
  • Cover with remaining batter, enclosing the jam, and smooth the tops gently.

Step 6: Bake
