Meatloaf Base
- 2 lbs ground beef
- 1 packet French onion soup mix
- 1 cup breadcrumbs
- 2 eggs
- ÂĽ cup milk
Flavor & Filling
- 1 cup shredded Swiss cheese, divided (plus extra for topping)
- ½ cup chopped onions
- 1 tablespoon Worcestershire sauce
- ½ cup ketchup (optional)
- Salt and black pepper, to taste

1. Mix the Meatloaf
In a large bowl, combine the ground beef, French onion soup mix, breadcrumbs, eggs, milk, and 1 cup of the shredded Swiss cheese. Add the chopped onions, Worcestershire sauce, and salt and pepper. Gently mix until just combined.
2. Shape and Transfer
Shape the mixture into a firm loaf and place it in the bottom of the slow cooker.
If desired, spread ketchup evenly over the top.
3. Cook Low and Slow
Cover and cook on LOW for 6 hours, allowing the onions to soften and the cheese to melt throughout the meat. The meatloaf should reach an internal temperature of 160°F.
4. Add Cheese Topping
About 15 minutes before serving, sprinkle additional Swiss cheese over the top. Cover again and continue cooking until the cheese is melted.
5. Rest and Serve
Carefully remove the meatloaf from the crockpot using two spatulas. Let it rest for 5 minutes before slicing to lock in the juices. Serve warm and enjoy.
