Crispy, golden on the outside, tender on the inside—these potato wedges are coated with Parmesan, garlic, and aromatic Provencal herbs for a side or snack you won’t be able to resist.

Ingredients

  • 400g potatoes
  • 50g grated Parmesan
  • 1 tbsp garlic powder
  • 1 tbsp olive oil
  • 2 tsp Provencal herbs
  • Salt, to taste
  • Pepper, to taste

How to Make Garlic Parmesan Roasted Potato Wedges

Step 1: Prep the Potatoes
Wash the potatoes thoroughly, leaving the skins on for extra flavor and texture. Slice each potato into six long wedges.

Step 2: Season the Wedges
In a large bowl, toss the potato wedges with Parmesan, garlic powder, olive oil, Provencal herbs, salt, and pepper until each wedge is well coated.

Step 3: Arrange for Baking
Line a baking sheet with parchment paper to prevent sticking. Spread the seasoned wedges in a single layer to ensure they cook evenly.

Step 4: Roast to Perfection
Preheat the oven to 180°C (350°F). Roast the wedges for around 50 minutes, turning once halfway through if desired, until golden and crisp outside, yet tender inside.

Step 5: Serve
Remove from the oven and serve immediately. Perfect with ketchup, aioli, or your favorite dipping sauce.
