Crispy Potato & Bacon Sheet Pan

Crispy, golden potatoes meet savory, smoky bacon in this easy sheet-pan recipe. Minimal prep, maximum flavor, and cleanup is a breeze—perfect for a weeknight dinner or a hearty side.

Ingredients

  • 4 medium russet potatoes, scrubbed and thinly sliced (~1/8-inch)
  • 6 slices bacon, cut into 1-inch pieces
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh chives or parsley, chopped

Instructions

Step 1: Preheat & Prepare
Heat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or foil for easy cleanup.

Step 2: Season the Potatoes
In a large bowl, toss the potato slices with olive oil, salt, and black pepper until evenly coated.

Step 3: Arrange on the Sheet Pan
Spread the seasoned potatoes in a single layer. Scatter the chopped bacon on top.

Step 4: Bake Until Crispy
Bake for 30–35 minutes, tossing halfway through, until the potatoes are golden and crisp, and the bacon is fully cooked.
