Warm Pineapple Custard Bake
This Pineapple Bake is a simple, cozy dessert that blends sweet, tangy pineapple with a lightly spiced custard. With just a few ingredients, the pineapple juice thickens into a smooth, pudding-like base, while a buttery, cinnamon-kissed topping adds extra warmth. Perfect for a holiday table or an easy weeknight treat.
Ingredients
Custard Base:
- 1 can (20 oz) crushed pineapple, with juice
- ¾ cup granulated sugar
- 2 eggs
- 2 tbsp cornstarch
- 2 tsp vanilla extract
Topping:
- 1½ tbsp butter, cut into small pieces
- 1 tsp ground cinnamon
Instructions
Step 1: Prep the Pan
Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish lightly with butter or nonstick spray.
Step 2: Make the Custard
In a mixing bowl, whisk together the pineapple with juice, sugar, eggs, cornstarch, and vanilla until smooth and well combined.
Step 3: Add the Topping
Pour the custard into the prepared pan. Dot with small pieces of butter and sprinkle evenly with cinnamon.
Step 4: Bake
Bake for 45 minutes, until the custard is set and the edges are bubbling and golden. Allow to cool slightly before serving.
