Chicken Parmesan is a timeless Italian-American favorite, known for its juicy chicken, rich tomato-infused cream sauce, and savory melted cheese. Ingredients
- 2 chicken breasts
- 3 tablespoons butter
- 1 teaspoon oregano, divided
- Salt and freshly ground black pepper, to taste
- 1 medium onion, finely chopped
- 1 small jar sun-dried tomatoes, chopped
- 4 garlic cloves, minced
- ½ cup heavy cream
- ½ cup chicken broth
- 1 cup fresh spinach
- ⅓ cup grated Parmesan cheese
Instructions
Season the Chicken
Season both sides of the chicken breasts with salt, pepper, and half of the oregano.
Brown the Chicken
Heat butter in a skillet over medium-high heat. If desired, add a small amount of oil from the sun-dried tomatoes for extra flavor. Cook the chicken for 3–4 minutes per side until golden brown. Remove from the skillet and set aside.
Build the Sauce
In the same pan, melt the remaining butter. Add the onion, garlic, sun-dried tomatoes, and the remaining oregano. Cook until fragrant and softened.
Create the Creamy Base
Pour in the heavy cream and chicken broth, then stir in the Parmesan cheese. Let the sauce simmer for 2–3 minutes until smooth and slightly thickened. Season with salt and pepper to taste.
Add the Spinach
Stir in the spinach and cook just until wilted.
Finish the Dish
Return the chicken to the skillet and let it simmer in the sauce for another 2–3 minutes so it absorbs the flavors.
Serve
Garnish with fresh parsley and serve warm.
